Alentejano IG Sparkling Wine
Sharing moments, ideas and experiences with people who are passionate about wine is something that I have always enjoyed and encouraged which is why I decided to create SIDECAR.
Each year I invite someone different to make a wine in my cellar and interpret with their vision and creativity the fantastic vineyards of Serra de São Mamede.
This year I invited my fellow countryman from Rias Baixas, Jose Luis Aragunde who decided to make a white wine in a chestnut barrel.
The result will definitely surprise you!
This is a very special wine produced with incredible grapes from the century-old vineyards of Serra de São Mamede.
Emmanuel Lassaigne accepted the challenge of making this wine and it was the first time he has made a wine outside his own production. For fermentation and aging we used 2 barrels from
Champagne and the wine was made without any addition of sulfites like Emmanuel do in his winery to produce its famous Champagnes.
The tirage was done using the traditional method and the degorgement was done with the method “a la Volée” by Emmanuel Lassaigne himself 2 and a half years later.
A unique and unrepeatable wine.
